Serves 4
| Lentils, dry | 2 C | 
| Basil | 2 tsp | 
| Salt | 1 tsp | 
| Water | 4 C | 
| Onions | 1 C | 
| Cumin | 2 tsp | 
| Oil | 1/4 C | 
| Garlic | 2 clove | 
| Tomatoes, diced | 2 C | 
Saute onion, cumin and garlic in oil. Add lentils and tomatoes. Cook until very thick.
"She loves and cooks with wild abandon" meets "hard times". A passionate cook working with a minuscule budget.

I'm always on the lookout for something different to do with the beans on the Simply Frugal shopping list:
pintos, navy beans, lentils, and split peas. Lentils seem to be less often used in the US than the others.
